Warm weather, toes in the sand, salty sea air all scream SUMMER! Summer for me as a kid meant packing up sand toys, pails, and sunscreen for a day at the beach. My sister and I would spend all day swimming in the salty ocean, giggling with each crashing wave.
Time stopped on those sultry summer days at the seaside. We’d make sand pies, collect shells, and eat hot dogs sprinkled with crunchy bits of sand. We didn’t care because we were having a blast.
I still spend many of my summer days at the beach. Not much has changed now that I’m a mom to three boys, except that one kid doesn’t like the sand, one has no fear of the water, and the other doesn’t want to leave. I promise despite their preferences, they share the same love for the beach as I do. They just appreciate the tastier beach elements like the bounty of allergy-free beach food I bring.
One of our favorite foods to bring to the beach are fruit salads. This red, white, and blue fruit salad packs a punch of berries, melons, and sweetness. Whether at the beach, park, or summer celebration, this salad is the perfect companion to any summer day.

- 2 red apples
- 1 cup of apple juice
- 4 cups of watermelon cut in 1 inch cubes
- 4 cups of strawberries cut in quarters
- 2 cups of black grapes
- 1 cup of blackberries
- 1 cup of blueberries
- 1 cup of raspberries
- 3 tbsp of honey
- 1 tsp of brown sugar
- 1 inch star cookie cutter

- Slice apples ½ thick and use star cookie cutter to create medallions.
- Add apples to apple juice and sit at room temperature for five minutes.
- In a large bowl combine watermelon, strawberries, grapes, blackberries, blueberries, and raspberries.
- Drizzle fruit mixture with honey and sprinkle with brown sugar.
- Remove apple medallions from apple juice and add to fruit mixture.
- Combine all ingredients and refrigerate until ready to serve.
