Ingredients
- 2 tbsp. Dairy free butter Earth Balance
- 3 large onions thinly sliced
- 1 bay leaf
- 4 fresh sprigs of thyme
- 2 cloves garlic chopped
- ¾ cup dry white wine (Reisling)
- 2 tbsp gluten free all-purpose flour
- 7 cups of beef broth
- 2 gluten-free hot dog buns cut into large 1-inch cubes Rudi's, Schär, Canyon Bakehouse
- Dairy free cheese Daiya, Follow Your Heart,

Instructions
- 1. In a large pot, melt 2Tbsp. of butter on medium heat. Add sliced onions, bay leaf, and thyme. Stirring frequently, cook onions for 30 minutes until the onions are caramelized or a deep golden brown.
- 2. Turn heat to low. Add garlic and deglaze with white wine. Add flour. Stir well making sure to remove any lumps. Return heat to medium. Pour beef broth in the onion mixture, season with salt and pepper to taste, and continue cooking for 45 minutes.
- 3. Preheat broiler and toast bread on a cookie sheet until it is hard and crunchy. Remove soup from heat, and pour in bowl. Add toasted bread to bowl and top with your favorite dairy-free cheese. Daiya's Style Shreds Mozzarella is delicious or choose Follow Your Heart's Vegan Parmesan shreds!
